This easy berry crumble with oat topping is my go-to for a quick dessert that always impresses. It’s incredibly forgiving, meaning even if you’re new to baking, you can whip this up without any stress. The sweet, slightly tart berries bubbling under a perfectly crunchy oat topping make it a real crowd-pleaser, and the aroma that fills the house while it bakes is just divine.
Ingredients
- 6 cups mixed berries (fresh or frozen)
- 1/4 cup granulated sugar, plus 1 tablespoon for topping
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1.5 cups rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup (1.5 sticks) unsalted butter, cold and cubed
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- In a large mixing bowl, combine the mixed berries, 1/4 cup granulated sugar, cornstarch, and lemon juice. Toss gently to coat.
- Pour the berry mixture into the prepared baking dish and spread evenly.
- In a separate small mixing bowl, whisk together the rolled oats, flour, brown sugar, cinnamon, and salt.
- Add the cold, cubed butter to the dry oat mixture. Use your fingertips or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Sprinkle the oat topping evenly over the berry mixture in the baking dish.
- Sprinkle the remaining 1 tablespoon of granulated sugar over the oat topping for an extra crisp finish.
- Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbly.
- Let the crumble cool for at least 10-15 minutes before serving. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
