Easy French Toast with Summer Berries

This is my go-to recipe for a weekend treat that feels fancy but is incredibly simple to make. I love how the slightly stale bread soaks up the custard, creating a perfectly tender interior and a crisp, golden exterior. Topped with fresh summer berries, it's a beautiful and delicious way to start the day, and I promise even beginner cooks won't find it intimidating!
Ingredients
- 8 slices of thick-cut bread (brioche, challah, or Texas toast work best)
- 2 large eggs
- 1/2 cup milk (any kind)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of nutmeg (optional)
- 1 tablespoon butter or oil, for cooking
- Fresh summer berries (strawberries, blueberries, raspberries) for topping
- Powdered sugar, for dusting (optional)
- Maple syrup, for serving (optional)
Instructions
- In a shallow bowl or dish, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg until well combined.
- Heat the butter or oil in a large skillet over medium heat.
- Dip each slice of bread into the egg mixture, ensuring both sides are coated but not overly saturated. Let any excess drip off.
- Carefully place the coated bread slices onto the hot skillet. Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Repeat with the remaining bread slices, adding more butter or oil to the skillet if needed.
- Serve the French toast immediately, topped with fresh summer berries and a dusting of powdered sugar. Drizzle with maple syrup if desired.
