Easy Huevos Rancheros for Two

I absolutely love a good Huevos Rancheros, but sometimes I just don't have the time for all the fuss. This recipe is my go-to for a quick, delicious, and satisfying breakfast that feels special without requiring hours in the kitchen. It's perfect for a lazy weekend morning or even a weeknight treat when you're craving something comforting and flavorful. Don't be intimidated by the name; this is truly an easy recipe that even beginner cooks can master.
Ingredients
- 4 large eggs
- 4 corn tortillas
- 1 cup salsa (your favorite kind)
- 1/4 cup shredded Monterey Jack cheese (or a Mexican blend)
- 2 tablespoons vegetable oil, divided
- 1/4 cup chopped fresh cilantro, for garnish
- Optional toppings: avocado slices, sour cream, hot sauce
Instructions
- Warm the tortillas: Heat the vegetable oil in a non-stick skillet over medium heat. Briefly fry each tortilla for about 30 seconds per side until softened and slightly pliable. Place warmed tortillas in a tortilla warmer or wrap them in foil to keep them warm.
- Heat the salsa: In a small saucepan, gently heat the salsa over low heat. Do not boil.
- Fry the eggs: Add the remaining vegetable oil to the same skillet over medium heat. Crack the eggs into the skillet and fry them to your desired doneness (sunny-side up is traditional).
- Assemble: Place two warm tortillas on each plate. Spoon some warm salsa over the tortillas.
- Top and serve: Carefully place two fried eggs on top of the salsa-covered tortillas. Sprinkle with shredded cheese and fresh cilantro. Add any optional toppings you desire. Serve immediately.
