One-Pan Harissa Chicken and Sweet Potato Hash

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 medium sweet potatoes (about 1.5 lbs), peeled and cut into 1-inch cubes
- 1 red onion, cut into 1-inch wedges
- 3 tablespoons olive oil, divided
- 2 tablespoons harissa paste
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- Fresh cilantro, chopped, for garnish (optional)
- Lemon wedges, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the cubed sweet potatoes, red onion wedges, 2 tablespoons of olive oil, harissa paste, cumin, smoked paprika, salt, and pepper. Toss well to ensure everything is evenly coated.
- Spread the sweet potato and onion mixture in a single layer on one half of the prepared baking sheet.
- In the same mixing bowl (no need to wash it), add the chicken thigh pieces, the remaining 1 tablespoon of olive oil, and a pinch of salt and pepper. Toss to coat the chicken.
- Arrange the seasoned chicken pieces in a single layer on the other half of the baking sheet, next to the sweet potato and onion mixture.
- Roast for 30-35 minutes, or until the sweet potatoes are tender and slightly caramelized, and the chicken is cooked through and lightly browned. Flip the chicken and stir the vegetables halfway through cooking.
- Once done, remove the baking sheet from the oven.
- Serve the harissa chicken and sweet potato hash hot, garnished with fresh cilantro and lemon wedges, if desired.
