Quick Berry Crumble with Oat Topping

I absolutely love a good fruit crumble, and this one is a weeknight savior! It’s incredibly simple to throw together, even if you’re new to baking. The warm, gooey berries bursting with flavor topped with a sweet, crunchy oat mixture is pure comfort in a dish. It tastes like it took hours, but I promise it’s one of the easiest desserts you can make.
Ingredients
- 4 cups mixed berries (fresh or frozen)
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/3 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small cubes
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 8x8 inch baking dish or similar-sized oven-safe dish.
- In a medium bowl, gently toss the mixed berries with granulated sugar, cornstarch, and lemon juice until evenly coated. Pour this mixture into the prepared baking dish.
- In a separate medium bowl, whisk together the rolled oats, flour, brown sugar, cinnamon, and salt.
- Add the cold, cubed butter to the dry ingredients. Use a pastry blender, your fingertips, or two forks to cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Sprinkle the oat topping evenly over the berry mixture in the baking dish.
- Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbly.
- Let the crumble cool for at least 10 minutes before serving. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
