Quick Black Bean and Corn Quesadillas

These Quick Black Bean and Corn Quesadillas are my go-to for a fast and satisfying meal. They're bursting with flavor from simple pantry staples, and the combination of creamy cheese, hearty beans, and sweet corn is just incredible. I love that I can whip these up in under 30 minutes, making them perfect for busy weeknights when I need something delicious without a lot of fuss. Even if you're new to cooking, these quesadillas are incredibly forgiving and totally foolproof.
Ingredients
- 8 (8-inch) flour tortillas
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup frozen or canned corn, drained
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro (optional)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 2 tablespoons olive oil or butter
Instructions
- In a medium bowl, combine the rinsed and drained black beans, corn, shredded cheddar cheese, shredded Monterey Jack cheese, chopped cilantro (if using), chili powder, cumin, and garlic powder. Stir until well combined.
- Lay out four of the flour tortillas on a clean surface.
- Divide the bean and corn mixture evenly among the four tortillas, spreading it over one half of each tortilla.
- Fold the other half of each tortilla over the filling to create a half-moon shape.
- Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
- Carefully place two of the filled quesadillas into the hot skillet. Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
- Remove the cooked quesadillas from the skillet and set aside on a cutting board.
- Add the remaining 1 tablespoon of olive oil or butter to the skillet.
- Cook the remaining two quesadillas, repeating the process from step 6.
- Once all quesadillas are cooked, cut each one into wedges and serve immediately.
