Quick Ground Beef and Corn Skillet with Black Beans

Ingredients
- 1 tbsp olive oil
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 tsp chili powder
- ½ tsp cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the rinsed black beans, drained corn, diced tomatoes with green chilies (undrained), chili powder, and cumin to the skillet.
- Stir everything together to combine. Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes, allowing the flavors to meld.
- Season with salt and pepper to taste. Serve hot.
