It’s my go-to when I’m craving something hearty and delicious but short on time. Even if you’re new to cooking, this recipe is incredibly straightforward; everything comes together in one pan, making cleanup a breeze and ensuring a fantastic meal every time.
Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, chopped
- 1 cup long-grain rice, rinsed
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 cups vegetable broth
- 1 teaspoon curry powder
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 1 cup mixed frozen vegetables (peas, carrots, corn)
- Fresh cilantro, chopped, for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Stir in the minced garlic and grated ginger, and cook for 1 minute until fragrant.
- Add the chopped red bell pepper and cook for another 3-4 minutes until slightly tender.
- Add the rinsed rice to the skillet and stir to coat it with the aromatics and oil. Cook for 1-2 minutes, stirring constantly.
- Pour in the diced tomatoes (with their juice), vegetable broth, curry powder, thyme, smoked paprika, and cayenne pepper (if using). Stir well to combine.
- Season with salt and black pepper to taste. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15-20 minutes, or until most of the liquid has been absorbed and the rice is nearly cooked.
- Stir in the frozen mixed vegetables. Cover again and cook for another 5-7 minutes, or until the vegetables are tender and the rice is fully cooked and fluffy.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the Jollof rice with a fork and garnish with fresh cilantro before serving.
