Quick Skillet Pork and Peach Stir-Fry

I absolutely love finding recipes that are both incredibly tasty and surprisingly simple, and this Quick Skillet Pork and Peach Stir-Fry is exactly that. It’s my go-to when I’m craving something flavorful but don’t have a lot of time. The combination of savory pork with the sweet, juicy peaches is just divine, and it all comes together in one pan, making cleanup a breeze. Even if you're new to cooking or a bit intimidated by stir-fries, this recipe is foolproof and will have you feeling like a pro in no time.
Ingredients
- 1 lb pork tenderloin, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp sesame oil
- 2 tbsp vegetable oil, divided
- 1 red bell pepper, thinly sliced
- 1 yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 ripe peaches, pitted and sliced
- 1/4 cup chicken broth
- 1 tbsp honey
- Cooked rice, for serving
Instructions
- In a small bowl, combine the sliced pork with soy sauce and cornstarch. Toss to coat evenly and set aside.
- Heat 1 tablespoon of vegetable oil and the sesame oil in a large skillet over medium-high heat. Add the coated pork and stir-fry until browned and cooked through, about 4-5 minutes. Remove pork from skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red bell pepper and onion, and stir-fry until tender-crisp, about 5 minutes.
- Add the minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
- Add the sliced peaches to the skillet and cook for 2-3 minutes, until slightly softened.
- Return the cooked pork to the skillet. In a small bowl, whisk together the chicken broth and honey. Pour the sauce over the pork and peaches.
- Stir everything together and cook for another 1-2 minutes until the sauce has thickened slightly and coats the ingredients.
- Serve immediately over cooked rice.
