Quick Spiced Lamb and Sweet Potato Hash
Flavorful lamb and sweet potato hash with warm spices, perfect for a speedy weeknight meal.
I absolutely love finding quick and flavorful meals for busy weeknights, and this spiced lamb and sweet potato hash is a winner. It brings together hearty, comforting flavors with a touch of warmth from the spices, making it feel far more elegant than it is to prepare. Don't be intimidated by the lamb; it cooks up beautifully and pairs wonderfully with the sweetness of the potatoes, creating a balanced and satisfying dish that even beginner cooks can master.
Ingredients
- 1 lb ground lamb
- 2 medium sweet potatoes, peeled and diced into ½-inch cubes
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- ½ tsp ground coriander
- ¼ tsp cayenne pepper (optional, for heat)
- Salt and freshly ground black pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and cook, stirring occasionally, for about 8-10 minutes, until they begin to soften and brown.
- Add the chopped onion to the skillet and cook for another 5 minutes, until softened.
- Stir in the minced garlic, cumin, coriander, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add the ground lamb to the skillet. Break it up with your spatula and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Drain off any excess fat if necessary.
- Season the hash generously with salt and freshly ground black pepper to taste.
- Continue to cook for another 2-3 minutes, stirring to combine all the flavors.
- Serve hot, garnished with fresh parsley if desired.
