Sheet Pan Lamb and Peach Skillet

This sheet pan lamb and peach skillet is one of my go-to recipes when I want something delicious and impressive without a lot of fuss. The combination of savory lamb and sweet, caramelized peaches is absolutely divine, and the best part is that it all cooks on one pan, making cleanup a breeze. Even if you're new to cooking, you'll find this recipe incredibly straightforward and rewarding.
Ingredients
- 1.5 lbs boneless lamb shoulder, cut into 1-inch cubes
- 2 ripe but firm peaches, pitted and cut into 1-inch wedges
- 1 red onion, cut into 1-inch chunks
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh mint, chopped (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
- In a large bowl, combine the lamb cubes, peach wedges, and red onion chunks.
- Drizzle the olive oil over the ingredients in the bowl.
- Sprinkle the dried rosemary, garlic powder, salt, and pepper over the mixture.
- Toss everything together gently to ensure the lamb, peaches, and onions are evenly coated with the oil and seasonings.
- Spread the seasoned mixture in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until the lamb is cooked through and slightly browned, and the peaches are tender and caramelized.
- Garnish with fresh mint, if desired, and serve immediately.
