Speedy Berry Crumble with Oat Topping
A quick and easy berry crumble with a delightful oat topping, perfect for a last-minute dessert.
I absolutely love this speedy berry crumble because it feels so homemade and comforting, yet it comes together in a flash. It's my go-to when I crave something sweet but don't have a lot of time. Plus, the combination of warm, tart berries with the crunchy oat topping is simply divine. Don't be intimidated by making a crumble; this recipe is incredibly forgiving and perfect for even beginner bakers.
Ingredients
- 4 cups mixed berries (fresh or frozen)
- 2 tablespoons granulated sugar (for berries)
- 1 tablespoon cornstarch (for berries)
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie plate or an 8x8 inch baking dish.
- In a mixing bowl, gently toss the mixed berries with the granulated sugar and cornstarch. Spread the berry mixture evenly in the prepared baking dish.
- In a separate mixing bowl, whisk together the flour, rolled oats, brown sugar, and salt.
- Add the cold, cubed butter to the dry ingredients. Use a pastry blender, two forks, or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces.
- Sprinkle the oat topping evenly over the berry mixture in the baking dish.
- Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbly.
- Let the crumble cool for at least 10 minutes before serving. It's delicious served warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
