Speedy Coconut Rice Pudding

When I'm craving something sweet and comforting but don't have a lot of time, this speedy coconut rice pudding is my go-to recipe. It’s so incredibly simple to make, using just a handful of pantry staples, and it comes together in under 30 minutes. The creamy coconut milk and hint of sweetness make it feel like a real treat, and I love that even beginner cooks can whip this up without any stress.
Ingredients
- 1 cup Arborio rice
- 2 cups water
- 1 (13.5 ounce) can full-fat coconut milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan, combine the Arborio rice and water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.
- Stir in the coconut milk, sugar, and salt. Bring the mixture back to a gentle simmer over medium heat, stirring constantly to prevent sticking.
- Cook, stirring frequently, for about 10-12 minutes, or until the pudding has thickened to your desired consistency and the rice is tender.
- Remove from heat and stir in the vanilla extract.
- Spoon the pudding into small bowls and serve warm, or chill in the refrigerator for at least 30 minutes before serving cold.
